Where To Eat?




Eating out is a treat at the Ming Court Licensed Restaurant. Eat-in or take-away (BYO saucepan). 
The best Chinese in town - in fact the only Chinese in town. The closest - 300kms down the highway to the east.
Comfortably air-conditioned - (close the doors after you - keeps out the heat!)
Just please notice the "!" after "Licensed" ... might that mean "you want a licensed restaurant, you pay for it"? Not just any old Chinese cafe, y'know ...

Horses' big weekend #3: The Helpers





While the horses and riders are resting up for their early start - the Helpers are Helping. 
While the horses and riders are trotting along the red-dust tracks and through the bush -  the Helpers are Helping. What's needed? Food, warmth, and very importantly, correct timing, veterinary checks and Continuously Endlessly Correct Records!

Horses' big weekend #2: Before the event

It's the sport called Endurance Riding - well named!
A big weekend for horses, riders and helpers. 

Rides are held every couple of months in the cool season. Riders & horses often come out to Charleville from far afield, arriving for the event after maybe two days of driving. 

For some, this is a serious business. A good performance means the horse has value as breeding stock - and that can mean BIG money from Dubai sheiks.

For others, it's a challenge of fitness for themselves and their horses and a chance to catch up with mates.

And this time there are also the backpacker travellers from France, Italy, Germany and the UK - all horse-riders at home - taking the chance to really see the "outback" from the back of their borrowed horses.

Saturday 2pm: 
Loading - always a special strategy for this horse 
("No! I don't wanna, don't wanna .... oh OK ... if you push me ...")
Ready to go - only a 5-minute drive to the ride base. 
Horses and humans get fed and settled in for the night, before tomorrow's early start. 




Sunday 8am: 
Now really ready to go - some smiley starters waiting for "Go!" at the start of their 40 kms 4-hour ride.

Way Out West #3: Tree vs Road

Tree 1, Road 0


One minute out of the "CBD".

A beautiful big eucalypt. The tree was there first - and stayed there. 

Further along the road, the tree's little sister can be seen. 

Why were those trees left: a) when the road began and  b) when the bitumen was laid. 
Silly questions - just happened that way...

Way Out West #2: Yellow Paint

Looks like somebody in Charleville got a bargain on yellow paint!

(And personally, I'm glad they did - what a great colour it is against that deep blue sky and the red dust.)

The true meaning of DIVINE

Pandan Jellies ... DIVIIIINE!!!

Gorgeously pretty delectable delight from Malaysia.

The delicate exotic flavour is from the combination of coconut milk and pandan* essence. 

The intriguing texture and lovely colour is from agar-agar and coconut milk.

Very easy and quick to make, even if you are nowhere near Malaysia! 

My personal best serving suggestions: 
1. For a special breakfast - with a good cup of coffee. A blissful start to the day.
2. Or later in the day with a nice glass of golden wine ... mmmmmm ...


How to make Pandan Jelly

~ 500 ml (2 cups) Water
~ 3 tsp Agar-Agar powder
~ 150 g sugar 
~ Couple of drops Pandan Essence* (extract) 
    (I just dip the end of a teaspoon in the bottle - essence is quite thick)
~ 160 ml Coconut Milk

In a medium saucepan, combine water, agar-agar powder and sugar and bring to the boil.
Reduce the heat and simmer until agar-agar and sugar completely dissolve - about 10-15 mins.

In a bowl, mix the coconut milk and pandan essence. Then pour into the simmering agar-agar mixture, stirring constantly until the mixture comes to a boil. Once it reaches a rolling boil, take the pan off the heat immediately and pour contents into a shallow glass dish or cake tin measuring approx 16cm across.

Set aside to cool before chilling in the refrigerator. Cut as desired and serve chilled.

Can be kept in the fridge for several days, covered.


*The leaves of the pandan plant provide a commonly used flavour in South-East Asian cooking. You can buy it in highly-concentrated "essence" form at Asian grocers or online.
